Not only are these little morsels wonderful to eat, but they are E-A-S-Y! (did you sing that? no? try again...E-A-S-Y!).
These could be served at a bridesmaids or other pre-wedding luncheon or as a dinner dessert. They could also be packaged and tucked into a welcome gift for visitors. Don't stop there...these would also make great favors!
Deletia was nice enough to share her recipe with us:
1 - 11 ounce bag semi-sweet chocolate chips (preferably Ghiradelli)
1 to 1-1/2 cups raw almonds, chopped
1/4 to 1/2 cup shelled pistachios, chopped
1. Toast almonds for 15-20 minutes in 350 degree oven, stirring occasionally. Let cool.
2. Toast pistachios for 10-15 minutes in 350 degree over, stirring occasionally. Let cool.
3. Melt chocolate in double boiler or microwave.
- If in double boiler, heat and stir until melted.
- If in microwave, cook for 1 minute, stir and check. Then cook for 30 seconds, stir and check. Repeat for 30-seconds at a time until melted. NOTE: Be very careful the chocolate doesn't get too hot, or it won't work!
4. Stir almonds into melted chocolate.
5. Pour chocolate onto waxed paper-covered cookie sheet and spread into a thin layer.
6. Sprinkle the pistachios over the chocolate and pat down gently with knife or back of spoon to slightly embed nuts into chocolate.
7. Cook in refrigerator until chocolate is hard.
8. Cut into squares or pieces.
9. Serve and enjoy the applause.
